Down Home Macaroni & Cheese

Servings:
5 servings (1 cup each)

Ingredients:
¼    cup (½ stick) butter or margarine (divided)
¼    cup flour
1      cup milk
½    lb (8 oz) Velveeta cheese (cut into ½ inch cubes)
2      cups elbow macaroni (cooked and drained)
½    cup shredded cheddar cheese
8      Ritz Crackers (crushed)

Directions:
1.  Heat oven to 350°F.
2.  Melt 3 tbs butter/margarine in a medium sauce pan on medium heat.
3.  Wisk in flour; cook 2 min, stirring constantly.
4.  Gradually stir in milk. Cook until mixture boils and thickens, stirring constantly.
5.  Add Velveeta cheese. Cook until melted, stirring frequently.
6.  Stir in Macaroni.
7.  Pour mixture into a 2 qt. casserole dish sprayed with cooking spray.
8.  Melt remaining butter/margarine and toss with the Ritz Cracker crumbs. Sprinkle over casserole.
9.  Bake for 20 minutes or until heated through and top is browned.
