Mother’s Sour Cream Oatmeal Cookies

SERVINGS
about 2 dozen cookies

INGREDIENTS
3/4  cup     shortening, lard, or butter (room temperature)
1       cup     sugar
2      eggs   (beat thoroughly)
½    cups   applesauce
2      cups   all-purpose flour
1       tsp     salt
1       tsp     baking soda
½    cup    sour cream
1/2   tsp    vanilla extract
1/8   tsp    lemon extract
3       cups  Quaker Old Fashioned Oats (uncooked) *not instant oatmeal
Optional (but delicious):
2/3   cup  chocolate chips
2/3   cup  raisins
2/3   cup  chopped nuts (pecans, walnuts, or almonds)

DIRECTIONS
Pre-heat oven to 350 degrees
Cream together the shortening, sugar, and eggs with an electric mixer.
Mix in the applesauce.
Sift the flour, salt and baking soda together and mix in a little at a time, alternating with the sour cream.
Mix in the vanilla and lemon flavorings.
If you intend to use the optional ingredients, stir them in (by hand) now.
Stir in the oatmeal (by hand). Mix well
Drop by heaping teaspoonsful onto your cookie sheet(s) (lined with Parchment paper or Silicone baking mat)
Bake in a pre-heated 350° oven for 12-15 minutes, or until done to your liking.

COMMENTS
My mother’s original recipe was enormous. You needed a cauldron to mix it. Because most of  you are normal, I did the math for you and cut the original recipe down by 2/3.
Mother made her own sour cream by mixing  milk and vinegar in a ratio of  4 parts milk to 1 part vinegar.
I haven’t tried it, but you might try substituting Buttermilk for the sour cream.
