Slow Cooker Hearty Beef & Bean Chili

SERVINGS

Serves:  6

INGREDIENTS

1 1/2 pounds ground beef
1 large onion, chopped (about 1 cup)
2 cloves garlic, minced
1 can (10 3/4 ounces) Condensed Tomato Soup
1 can (about 14.5 ounces) diced tomatoes
1/2 cup water
2 cans (about 15 ounces each) red kidney beans, rinsed and drained
1/4 cup chili powder
2 teaspoons ground cumin

DIRECTIONS

  1. Cook the beef in a 12-inchskillet over medium-high heat until it’s well browned, stirring often. Pour off any fat.
  2. Stir the beef, onion, garlic, soup, tomatoes, water, beans, chili powder and cumin in a 3 1/2-quart slow cooker.
  3. Cover and cook on LOWfor8 to 9 hours, or on HIGH for 4 to 5 hours.
  4. Serving Suggestion: Serve with slices of cornbread and a Romaine salad tossed with fresh chopped basil and chives and Italian salad dressing.
