Idaho Baked Potato Soup

SERVINGS

6-8 Servings

INGREDIENTS

· 2/3 cup butter

· 2/3 cup all-purpose flour

· 7 cups milk

· 1 cup sour cream

· 4 large potatoes, baked, peeled and cubed

· 4 green onions

· 12 slices cooked bacon

· 1 ¼ cup grated cheese

· Salt and pepper to taste

DIRECTIONS

1. In a large pot, melt butter.

2. Stir in flour, heat and stir until smooth.

3. Gradually add milk. Stir constantly until thickened.

4. Add potatoes and onions, and bring to a slow boil. Reduce heat and simmer for 10 minutes.

5. Add cheese, bacon, and sour cream.

6. Stir until cheese is melted.

7. Season to taste.

COMMENTS

1. You can boil the potatoes as well. Either one makes a delicious soup.

2. My favorite cheese for this soup is sharp cheddar, but any cheese will do. How about a nice Havarti or Muenster?
