Deviled Eggs

INGREDIENTS

· 1 dozen hard-boiled eggs (large grade A)

· 1/2 cup mayonnaise

· 1/8 cup mustard (your choice as to which type you want to use).

· 1 tbs horseradish sauce (you can find it near the mayonnaise and mustard in your favorite store)

· Salt and pepper to taste. Also some Paprika to finish them off at the end.

· 1 or 2 drops of lemon juice

· 1/2 can Deviled Ham (optional)

. 2 tbs finely diced onion (optional)

DIRECTIONS

1. Peel the eggs taking care to keep as many as possible intact.

2. Slice the eggs in half lengthwise.

3. Remove the yolks and put in a mixing bowl.

4. Carefully wash and dry the egg white halves and set aside on a tray.

5. In the mixing bowl with the yolks, mash the yolks with a fork until a uniform grainy consistency is achieved.

6. Add the mayonnaise, mustard, horseradish sauce, salt and pepper.

7. Mix together until well blended. Taste the mixture. Add more salt and/or pepper if needed.

8. Add the lemon juice a drop at a time. Mix, then taste, between each addition. Be careful, a little goes a long way.

9. Stir in the optional ingredients.

10. Using the back of a teaspoon, fill each egg-white half with the mixture. Sprinkle each egg lightly with Paprika.
