Carrot Raisin Salad

SERVINGS
Serves:  4-6

INGREDIENTS
•    2 cups grated carrots
•    2/3 cup raisins (steamed)
•    1 cup crushed pineapple (drained)
•    1/3 cup mayonnaise
•    1 tbs lemon juice
•    1tbs sugar
•    ¼ tsp salt

DIRECTIONS
1.    Toss carrots, raisins, and pineapple together lightly; set aside.
2.    Stir together mayonnaise, lemon juice, salt, and sugar. Add to the carrot mixture. Stir together.
3.    Refrigerate until served.

COMMENTS
1.    Substitute 1 cup diced apples for the pineapple.
2.    Toss in a generous handful of your favorite chopped nuts.
