Porcupine Meatballs for Slow Cooker

INGREDIENTS
• 1 1/2 lb hamburger (85% or leaner)
• 1/2 lb ground pork
• 1 1/2 cups long grain rice (uncooked)
• 1 bell pepper, diced
• 1 onion, coarsely diced or sliced
• 1 12 oz. can of spicy V8 juice
• Salt and pepper to taste (also a sprinkle or 2 of nutmeg  and ginger are good)
DIRECTIONS
1. Combine hamburger, pork, rice and seasonings in a big bowl. Mix together with your hands.
2. After all the rice is incorporated into the meat, form into balls about 1 to 1½ in. in diameter.
3. Sear the meatballs  on all sides in a skillet with 2 tbs of your everyday cooking oil.
4. Place the meatballs in a 5 qt. slow cooker.
5. Add the Bell Pepper, Onion, and the V8 juice.
6. Cook on high for about 4 hours, or on low for about 8 hours.
COMMENTS
1. You can substitute bulk Italian sausage, ground turkey, ground chicken, veal, or more hamburger for the ground pork.
2. You can add a cup (or so) of a nice salsa, and/or a can of diced tomatoes if desired.
3. Make sure that your hands are clean when you mix the rice with the meat, because they will be clean when you’re done.
